Every time I bite into a mango, I’m overwhelmed. This is a flavour you cannot ignore. One that doesn’t evolve or creep up on you, but a tidal wave that completely drenches you and leaves you gasping for air. From the moment you see it, feel it’s juicy ripeness in your hands, smell it’s sweet skin, till you take that first bite of sunshine orange. It’s not unlike the first time someone tells you they love you, the moment you dip down from the highest point on a roller coaster, the feeling of a cold shower over your sweat and sticky, the brightness of taking off a jacket on a sunny spring day.
